We had a great trip to North Carolina to interview Dr Boyd Switzer at Chapel Hill about his work with flax and prostate cancer. We have included pictures of this years flax crop which is in full bloom and we are happy to announce the upcoming wedding of our son Jarrod to Elise. This summer the Juneberries in the woods by our home were lush, and brimming with flavor. We made Juneberry Pie, Juneberry-Flax pancakes, Juneberry-Flax Muffins, we had Juneberries and Flax on our cereal in the morning, and my favorite…vanilla yogurt topped with Flax and Juneberries! Juneberries are similar to Blueberries, however they are smaller and have at least 10 times the flavor of Blueberries. They grow wild in the woods in our area…and are heavenly! I am going to share with you a wonderful recipe for Flax Blueberry Muffins. This recipe is courtesy of The Flax Council of Canada, our friends to the North. The crops in North Dakota look great this year. The spring wheat tour was just completed and the consensus was that this year’s hard red spring wheat crop would be 8 bushels per acre above the average. The same cooler than normal weather that is good for wheat has also had a positive impact on our Golden Valley Flax crop for the year. As you can see from the picture of our blooming flax field the prolific number of blossoms is well beyond what we normally see. Read more here...
